Banana, Date And Walnut Muffins
Makes 8
- 3 free range organic eggs
- quarter cup coconut oil melted
- 2 medium bananas
- 3 dates, pitted
- 1 tablespoon honey, stevia or coconut sugar
- quarter cup coconut flour
- 1/4 tsp sea salt
- /2 tsp baking soda
- 1/2 cup walnuts, toasted and chopped
Preheat the oven to 180° C. Line the cups of an 8 cup capacity muffin pan. Place the eggs, oil, bananas, dates and honey in a food processor and blend on medium speed until well combined.
Mix together the coconut flour, salt and baking soda and add to the banana mix.
Blend until smooth. Fold in the walnuts. Divide into the muffin cups and bake for 20 to 25 minutes. Cool and serve.
