Pie has become a new family favourite of ours in our home. Just recently our friend Ann Marie and her son Micheal shared this recipe with us at our last vegan pot luck dinner we hosted at our home.
This raw pie is made with whole natural ingredients, and is free of wheat, sugar, and dairy.
It will shock you to find out just what ingredients are actually in this pie to make it taste so great!
Raw Pecan Pie
- 2 cups of pecan pieces ( soaked overnight or for at least four hours) At the same time pick out about 15 or so large pecans and soak for decorating the top of the pie
- 1 1/2 cups of unsweetened coconut
- 30 dates
Blend all the above ingredients in the food processor till creamy. Press this mixture in the bottom of a pie dish
Ingredients for the syrup are:
- one orange peeled and cut into pieces
- 1/4 cup of dates
- a wee bit of spring water
Process this mixture in food processor or blender until smooth and creamy, pour over pie crust
Now sprinkle the pie with coconut and arrange the large pecans in a circle around the edge of the pie. Saving a few for the middle to make a decoration out of them.
I made this pie with my three and a half year old grandson the other day, and to be honest he did all the counting of the dates, all the picking out of the pecans to decorate the top with, and was in charge of pressing the button to do all the processing. He then pressed the crust into the pie dish, and proceded to do the rest, the only part I assisted with was the final decorating on the top.
What a joy it was to prepare such a healthy dish such as this, with my grandson, to take to our family dinner the next day. ( and YES it was a big hit!)
