- 2 1/2 cups of organic coconut
- 2 tbsp of gluten free flour
- ¼ tsp of xanthan gum
- 6 tbsp of pure maple syrup
- ½ tsp almond extract
- 1/8 tsp sea salt
- 1 egg white (beaten till stiff)
Combine mixture till crumbly ( except egg white)
Then gently fold in egg white
Make into mounds with your hands
Put on baking sheet with parchment paper for 15-20 minutes at 350 degrees
Can put carob chips on top when removed and still warm from oven or can mix some in before baking.
