Vegan Carrot Cake : a Healthy Sweet Treat

A vegan Carrot Cake which is Delicious 🙂

Indulging in healthy sweets is a treat for all. But when you make these choices “healthy’ ones you don’t feel so guilty in the process.

Learning to satisfy our sweet tooth and make good choices was something we have been leaning towards for quite sometime. I think you will enjoy some of these healthy sweets as much as our family has.

All our recipes have been altered to suit a gluten free diet as well.

Vegan Carrot Cake

  • 1 medium ripe banana ( frozen then thawed slightly)

  • 2/3 cup of raw sugar or maple syrup
  • 3/4 cup of oil
  • 1 1/2 cups of grated carrot or carrot pulp from juicing
  • 1 1/4 cups gluten free flour
  • 1 tbsp of baking powder
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/2 tsp of ground nutmeg
  • 1/2 cup of raisins
  • 1/2 cup of walnuts

Mix all together grease and coat a loaf pan bake at 350 degrees for an hour

For Icing:

  • 1 1/2 cups of icing sugar
  • 1 tbsp of vegan margarine
  • 1/2 tsp of vanilla

Drizzle icing over cake when cooked and still warm

The following are some revised recipes from the Hallelujah Diet recipe book titled Recipes for Life, we have made a few changes to them to accommodate a gluten free diet.

Vegan Brownies

  • 2 cups of gluten free flour ( see notes below for mixture of flour)

  • 1 cup of water
  • 1 cup of raw sugar or maple syrup
  • 1 tsp vanilla
  • 3/4 cup of cocoa
  • 1/2 cup of oil
  • 1/2 tsp baking powder
  • 1/2 cup of nuts ( optional)
  • 1/2 cup of vegan chocolate chips or carob chips
  • 1 tsp sea salt

Boil water and 1/2 cup of flour, stir until thin gluey paste. Remove and cool completely.

Mix sugar, salt, vanilla, cocoa, and oil together then add the rest of the flour water mixture. Add remaining 1 1/2 cups of flour, baking powder chocolate chips and nuts. Spread in a 11x 7 greased pan, bake at 350 degree oven for approximately 25 minutes.

Almond Butter Balls

  • 1/2 cup of Organic Almond Butter (Raw, Smooth)

  • 1 cup of flax seed
  • 1/2 cup of honey or maple syrup
  • 1/4 cup of crushed nuts, coconut and sesame seeds combined

Mix all together and roll into to small balls, keep chilled

 

Happy Vegan Chip Cookies

  • 2 cups of gluten free flour

  • 2 tbsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp cinnamon

Carob chips or vegan chocolate chips

  • 1 cup or raw sugar or maple syrup
  • 1/2 cup of oil
  • 1 tsp vanilla
  • 1/4 cup of water

Mix all together and place small tsp of batter spaced 1/2 inch apart on parchment lined cookie sheet bake at 350 for approximately 10-12 minutes

Peanut Butter Balls

  • 1 cup of organic peanut butter

  • 1/2 cup honey/maple syrup
  • 1/4 cup of sunflower seeds
  • 1/4 cup of sesame seeds
  • 2-3 cups of gluten free corn flakes ( crushed)

Mix together first 4 ingredients then roll in crushed corn flakes

Make into balls and keep chilled

Date Almond Squares

  • 1 cup of organic dates

  • 1/2 cup of almonds
  • 1 tsp vanilla
  • 1 cup of organic raisins
  • 2 cups of coconut

In food processor, using a S blade, to grind almonds to a fine meal, add dates and raisins, process until a dough like consistency is reached. By hand, work in 1/2 cup of the coconut. Sprinkle 3/4 cup of coconut in round pan place mixture on top and spread in then flip mixture over and spread rest of coconut mixture on the other side to cover bottom layer.
