These fruit cake cookies are so tasty you will hardly believe that they are filled with healthy ingredients that are sugar free, dairy free, and wheat free as well.
My friend Ann Marie and I stumbled upon this recipe when we were doing our Christmas raw baking last week.
We took a raw oatmeal cookie recipe and made it into wonderful fruit cake cookies.
Using organic ingredients such as steel cut oats, dates, raisins, nuts, apples and dried fruits we created a sure to please cookie for the holidays. To top it off we even came up with a marzipan icing that is raw as well!
Fruit Cake Cookies
- 2 cups ground up sprouted grains (or if not going totally raw 2 cups of steel cut oats- these are not considered raw)
- 1/4 cup of dates ( unpitted)
- 1/4 cup of raisins
- Sweetener such as stevia or agave syrup ( 1 tsp or less)
- 3 apples peeled and chopped up
- 1/4 cup of chopped pecans
- 1/4 cup of chopped walnuts
- 1/4 cup of slivered almonds
- 1/4 cup of dried cherries
- 1/4 cup of dried apricots
- 1/4 cup dried currants
- About 1/4 cup of ground flax and 1-3 tbsp water
( there really is no rule when it comes to what dried fruits you wish to add just make sure you have equal part nuts and fruits.
In your food processor add steel cuts oats and grind till fine, take out and put in large bowl. Next process the dates and raisins. Add these to the bowl. Next add back to the food processor half of the oat/raisin/date mixture and add in the apples. Process till smooth batter. Start now by adding all ingredients together except the ground flax and water back into your large bowl .When you get all the ingredients mixed up well next add the flax and water.
Form this into cookie shapes and put on your dehyrator sheets. Dehydrate for approximately 8 hours flipping cookies half way through.
Raw Marzipan Icing
- 1/4 cup of raw unsalted cashews
- 1/3 or less of melted coconut butter
- 1 tsp pure agave syrup
In food processor blend the above ingredients. Then ice each cookie and decorate if you wish with a wee tiny silver ball ( used at Christmas time to spruce up your baking)
