Gluten Free Pancakes

Gluten free pancakes became a family favorite in our home this past winter. Upon experimenting more and more with raw “alive” foods, I discovered this recipe and started using it. With a few small changes here and there I think I have come up with the perfect healthy pancake recipe. That is super easy and so good for you.

These fun pancakes are made using no flour, no sugar and no eggs. The main ingredient is flax meal which we all know is excellent for our digestive system and overall health. Loaded with Omega 3’s this funky seed delivers such goodness you won’t feel guilty going for seconds.

All the ingredients in this recipe are wholesome and full of wonderful health benefits.

Gluten Free Pancake Recipe

  • 3 cups of ground flax mealgluten free pancakes
  • 2 tbsp. melted coconut oil
  • 1/4-1/2 cup of agave syrup or maple syrup
  • 1/2 tsp sea salt
  • 1/2-1 tsp cinnamon
  • 1/2 cup distilled spring water

Mix all the ingredients together in a medium size bowl.

(This can now be stored up to five days in the refrigerator)

Shape these pancakes on your plate, and decorate with fresh berries, small pecan or walnut pieces, or coconut flakes.

Drizzle with maple syrup or agave syrup

These can be prepared using your dehydrator, or if you do not own a dehydrator you can set your oven at 100-103 degrees and use it. This process will take approximately 4-6 hours depending on the firmness desired.

I often just serve mine completely raw and the taste and texture are wonderful.

These are a great little treat to take with you when you are traveling, we often take them to our cottage on weekends. Plus I think they will become a favorite when we go camping this summer as all the work is done for you before you leave home. Certainly an added bonus!
