A gluten free chocolate chip cookie recipe isn’t always easy to find. But finding the one that tastes best is sometimes a challenge. For me it was trial and error when I made the switch to this healthy lifestyle eliminating gluten from my diet.
When I discovered I had an allergy to gluten it didn’t take me long to arm myself with recipe books and various recipes on gluten free desserts. I quickly realized that when I didn’t indulge in gluten foods I felt so much better. My symptoms started to vanish and my weight began to drop, my energy soared! WOW this was great, I was feeling like my old self again!
A good cookie recipe is always to be treasured and when I found this one I started to use it a lot and make a few changes here and there, until I was happy with the results.
We live a vegan lifestyle so we do not use eggs, or dairy in our baking, however you feel free to make any necessary changes to suit you.
Gluten Free Chocolate Chip Cookie Recipe
We call this recipe Happy Vegan Chocolate Chip Cookies but like I explained earlier you can change this to suit your needs as well. But feel free to make them actually the way the recipe calls you will not be disappointed either.
- 2 cups of gluten free flour
- 2 tbsp. gluten free baking powder
- 1/2 tsp. sea salt
- cinnamon to taste
- 1/2-1 cup of vegan chocolate chips or carob chips
- 1 cup of raw sugar or 1/2 cup or pure maple syrup
- 1/2 cup of oil
- 1 tsp. vanilla extract
- 1/4 cup of distilled water
Mix the above ingredients in a medium size mixing bowl with an electric beater, drop by spoonful on a lined parchment paper cookie sheet.
Bake at 350 for approximately 10-15 minutes ENJOY!
